So what is the "easiest" playing acoustic out there

Woah .. now that is a tough question.
Most acoustics need a pro setup to make it play easy.
There are a few neck shapes out there, personally for Chording I prefer a V shape, for more fingering stuff a C shape.
Personally one of the easiest to play guitars I've had before were Fylde guitars. Besides that Seagull guitars have a rather thin neck making it fairly easy to finger and chord on but for big fingers a bit cramped. Also remember playing an ovation that had pretty low string tension that played very easy.
I'd say go try some out, also if you want to go boutique you can always specify what you want.

...I can (and will) attest that a properly setup and strung (.010-0.046's not .013-.056's!) Ovation will play almost as fast & easy as any electric guitar (I also play a Tele and Gibson).
...of course the BIG-body might get in your way somewhat...or slide off your lap / knee when playing (hint: use a strap ALL the time, even when sitting).
Taylor guitars are generally very well set up, and easy to play.

Compared to other acoustics, my Taylor 810 is easy to play. But if I haven't played acoustic in a while, it's brutal on the fingers, being that they're setup with medium strings.

i tinkered with my takemine for a long time and finally got it playing close to a good electric..'course i took the saddle down so far that there was barely any breakover angle and it sounded like a sitar 'til i made a new one.:D
i agree with the taylor comments..i love their necks and set up properly they play like silk. i can't do the ovation thing..my round belly and their round backs just don't work.
Every Taylor I've played has been really easy.

+1 on Taylor. My 414ce plays as easy as most electrics if they were strung with 12's.
