How can I use stereo delay in the FX loop of my amps?

If it's being used in just one amp, use the mono in/out on the delay. If you're running two amps in a stereo configuration, one amp would have to be used as a slave if you're wanting to do it in the loops. Use the loop send from the amp that you want the guitar plugged into. That would go into the mono input of the delay, and then the two outputs from the delay would go to the loop returns in each amp.

If you have two amps and your delay is stereo in and stereo out you just run the left in/out to one amp and the right in/out to the other amp. It's a lot of cable runs, but sounds killer!

This would be my suggestion as well. Just one other option in case you want to utilize both preamps and your delay has stereo ins - you could use a splitter box (ABY in Y setting) and go to the input of both amps, the send from each amp to to the right or left (respectively) input of the delay, then to the fx return of each amp (again, respectively). However, the first option will be easier as you only have one set of knobs to control your entire sound.
