Dave Hunter - The Guitar Amp Handbook. Very clear and understandable book on not just how tube amps work, but a good bit of why, plus some examining of classic circuits.

Aspen Pittman - The Tube Amp Book. Handy more for its collection of schematics than any revolutionary info, but there's some excellent material contained within.

...search the net for: "JACK DARR" and "ELECTRIC GUITAR AMPLIFIER HANDBOOK"....there were 4 editions, one of which has been scanned into PDF files and posted on the web. Excellent info for both novice and trouble-shooting theory!

All that have been mentioned and the Gerald Weber books ,the RCA receiving tube manual, Kevin O'Connors books.......etc.
