Had to ask. I keep coming across transformer info in researching amp tone and wonder why they contribute so much.

Because they provide the voltage and current in the amp.
Different levels of voltage and current will make the circuits behave differently and as a result, affect the sound.

An output transformer has inductance which effects the frequency response of the amp. Also, the design of a transformer will affect how it saturates, which will have an effect on how an amp breathes, feels, an/or sags.

Reminds me of a story about deep purple doing sound check. Someone said to the soundcrew -- "could we have everything a little louder than everything else"
