Using Speaker Out as Line Out

is there a way to use the signal from the speaker out of a head as a line out?

You'd need to use a load box. The THD hotplate will allow you to do this (i think some of the weber stuff has this feature too).

cool. is there anything that doesn't attenuate but just splits the signal to a speaker out and a line out? something very simple and clean that won't compomise the integrity of the signal...

Yes, and just a couple resistors. Look at a schematic for a late '70s Fender Twin Reverb.
