Ya know, the silver thing that hangs down like a tube, is there a sonic or functional difference between those and a row or stack of caps?

Short answer, provided the collective capacitance of the capacitors is the same, there should be no difference.
Longer answer, switchmode power supply designers have long known the benefit of reduced ESR in smaller value, paralleled capactors.
Summary: It makes no difference in tone, IMO.

I was thinking of replacing the cap can with a stack and then using the opening in the chassis to install a tube rectifier, but, I'm too lazy.
And the amp sounds good as is.
One thing I may do is replace the paper looking circuit board with a turret and all new caps ands resistors.

In my opinion, unless the power transformer has an unused 5Vac filament winding for a vacuum tube rectifier, its not worth doing.
