May I suggest than the incredible German player Peter Finger. IMO, an even better player than Tommy Emmanuel. A great CD of his is "Open Strings".

I'm gonna go a different direction... Been listening to Jackson Browne's Solo Acoustic Vol. 1 quite a bit. (Okay some of it is piano and not guitar, but...) Simple, tasteful, toneful... Guitar, Vocals, live stage.

This might be out of left field but the great Dobro player, Jerry Douglas, has an a CD out called Skip, Hop & Wobble with Russ Barenberg on acoustic guitar and Edgar Meyer on standup bass, phenominal record. It's an all instrumental blue grass style album which is not normally my thing but it really is great.

Laurence Juber Plays the Beatles is a good one if you like the Beatles and want to hear some great solo playing, sans vocals, that's also recorded beautifully.

I kid you not. For a buck 96 used, and make certain yours comes with the CD too, this table book has gorgeous custom guitars and some famous musicians taking a stab at it. Half of the tunes on there I'd rate as some of the best recorded acoustic takes recently, due to all of it being "side projects" and probably recorded on a couch, one mic into a DAT. pure. you won't be disappointed!

John McClaughlin's acoustic stuff is radically different but great (try Poets and Thieves which is part symphonic / part jazz)

I second the Michael Hedges suggestion. Gypsy Kings are way cool. Acoustic Alchemy is pretty nice.
If you want the ultimate burner acoustic disc, Friday Night in San Francisco with Paco De Lucia, Al DiMeola and John McLaughlin.

The Free Wheeling Bob Dylan, any Gordon Lightfoot, any Alison Krauss - Union Station.
Into the Wild - Eddie Vedder is real good. There's so much good acoustic stuff that's timeless.
I'd say it's actually a bigger ocean with a deeper depth than the electric side of music.

Nick Drake's "Pink Moon" is probably my fave. Just acoustic guitar and voice (and one little piano line at the end of the title track).
Chris Whitley's "Dirt Floor" is awesome if you dig Resonators. Just one mic and Chris and his National steel on that one.

Martin Simpson hasn't been mentioned yet. Some CD's have vocals, some are instrumental. Love him...great tone, a mix of American blues and English traditional folk. Usually only available on-line. I particularly like Righteousness & Humidity & Bootleg USA. I haven't heard the two latest...didn't even know the second one was out. I may have to order soon.
I also really like Franco Morone's The South Wind. Nice celtic tunes from an Italian.

Mike Dowling is very good but not well known.

Check out the "Tone Poems" series from David Grisman. It is all instrumental guitar and mando-family, and they play gorgeous vintage instruments.
Vol. 1 is bluegrass and old-time flavored and features Tony Rice.
Vol. 2 is jazz and swing and features Martin Taylor pulling off some JAW DROPPING acoustic fingerstyle jazz.
Vol. 3 has Bob Brozman and Mike Audridge on resonator.
This series is a real treat for both acoustic players and vintage guitar fanatics. Each come with a little color book that showcases the instruments.

I suppose it all depends what kind of stuff you are looking for but when I read the title page of your post this was the album I thought of right off the bat.
Jackson has always been a tone freak...he loves the sounds that come from great instruments/amps. These instruments inspire great playing and writing. Simple, yes, but I sure wish I could write like that.

Also Check Strength in Numbers The telluride sessions. It has the best musicians of their particular instruments. Sam Bush(Mandolin) Tony Rice(Guitar) Jerry Douglas(Dobro) Bela Fleck (Banjo) Edgar Meyer (Bass) Mark O'Connor(Fiddle)........
And Bela Fleck The Blue Grass Sessions: Tales From The Acoustic Planet 2.
This is a really amazing record featuring Jerry douglas, Tony Rice, Sam Bush, vassar Clements, Earl Scruggs, and John Hartford.

There are sooooo many great players of the acoustic guitar... I'd have to give a strong "ditto" to Michael Hedges' work if you want to see how far the acoustic guitar can go...
I've always loved the acoustic playing and recorded sounds of the guitar that Paul Simon gets; there are some wonderful examples on his first solo LP and many since then - his work w/ Simon and Garfunkel is great, too.
Richard Thompson is an obvious choice - some of his influences would be Bert Jansch and John Renbourn... John Fahey was the progenitor for Leo Kottke, as well as many other American players.

I'm surprised noone has mentioned Willy Porter yet. Don't have any of his records but every song I've heard with him is just a driving yet emotional piece of art. No surprise I went with his signature guitar the previous time I had GAS. Then obviously I'm not him... ;?)

Jorma is my all-time favorite on acoustic, anything but Blue Country Heart is a great CD (I have the 5.1 SACD - wow!) and Quah is...well...listen to it and you'll understand.
+1 on the Pizza Tapes. Always love me some Garcia and Tony Rice is a monster! Any of the CDs on Grismans Acoustic Disc (I think..) label are great.

Pretty much anything by Adrian Legg-I'd start with 'Guitars and Other Cathedrals'.
Also David Wilcox (the one from Asheville, NC, not the Canadian). With respect to James Taylor, Wilcox sounds like his smarter older brother to me. Killer open tuning work.

If you're looking for a recent example of flatpicking guitar that is both tasteful and jaw-dropping, pick up Bryan Sutton's Almost Live (2009).
In a similar vein, pick up the Tony Rice/Peter Rowan Quartet album from a couple of years ago, with the most amazing "Shady Grove" you've ever heard.
