I'd like to try changing coupling caps brands in some kits I'm going to build. I'm assuming that as long as I get the uF values within tolerances, that caps with voltage ratings greater than what's spec'd is OK? E.G. the spec is 400v rated, but the replacement is 600v rated - that's cool?

Yes. 600V (630V) is more than adequate for coupling cap's in any amplifier I've worked on.

Thanks. Is it safe to say that when I see two coupling caps in a circuit, same capacity, but different voltages (e.g. 250v, 400v), that the designer was just saving money by using the lower voltage one? There's no tonal or circuit considerations there, right?

Lower voltage caps also save space.
