I have a strat style neck with one string tree for the E and B string.
When I bend the B string around 5th fret my finger goes under the G string and pops it out of the nut. I'm thinking of adding a string tree for the G and D string any thoughts??

You certainly can do, but keep in mind that it may cause tuning issues of you're a tremolo user. Another option is to go to Sperzel tuners, which have staggered posts to accomplish the same goal, i.e. increasing the break-angle over the nut. There are also other tuners with staggered posts, but Sperzel are my personal choice. If you go the string-tree route, you can always use some lubricant - graphite, Nut Sauce, etc. - where the strings touch the tree, in order to reduce friction. Try lubricating the nut slots as well, while you're at it, just on general principles. Good luck,
Rob

Check out the nut slot for the G string.
If you can deepen it just a bit it may keep it from popping out.

I have Sperzel tuners. The E and B string have the two shortest post then getting taller for the A and low E string. The nut is a Earvana. The nut slot is lubed but has a slight V shape that helps it slide out. I did the work so that's my fault. I'm wondering if swapping tuners with the E or B string and using it for the G string word work. Might just have to try it.

With Sperzels, I use the tuners meant go with the E and B in the G and D spots. If you have a string tree for E/B, there is really no reason fo a shortened post in that position.
