The other thread got me thinking of heaps of solos Ive heard that I like, but there were a few that werent played by guitar, some by Sax or Piano or Violin. Mostly corny stuff but i'm sure there's some good ones out there. Heres a few to start off
Something got me started - Simply Red
My Baby - Cold Chisel
Rush Rush - Paula Abdul
Anything by Bruce Hornsby

First one I thought of too!
Also, Sanford-Tonshend Band's sax solo in "Smoke From a Distant Fire" and tons of sax solos in Steely Dan stuff.

Before guitar, back in the early 60s, I was digging sax. And it was the sax solo on The Coasters' "Yackety Yak" that really pulled me in. And to this day, that is one of the hottest sax solos on a pop record.

I've always loved the organ solo in "House of the Rising Sun." Starts at 1:50.

The keyboard solo in Daft Punk's Digital Love is the best non-guitar-solo guitar solo ever! :D

Jr Walker's sax solo in Foreigner's "Urgent" comes to mind.
Bob Mayo's Fender Rhodes solo on "Do You Feel Like We Do"
David Paich's layered synth solo on "Rosanna"
