Martin Simpson has a DVD where he explains the relationship between various open tunings. It's more about how to transfer what you know between tunings than it is about teaching you how to play in a bunch of tunings. It's all acoustic and covers a lot of modal tunings like DADGAD, rather than just open chord tunings like open G and E.

"The Complete Guide to Alternate Tunings", "Alternate Tunings Picture Chords"

Both books are great and written by Mark Hanson...available at Amazon.com

Try Pierre Bensusan's "The Guitar Book"...mostly about DADGAD, but all sorts of worthwhile exercises and tunes in there.
