Poutine isn't real poutine unless you use the real curd cheese. For the maximum effect, you should wash it down with a cold Pepsi.

Congrats. My grandmother is from Quebec and she make made this for me every now and then when I was a kid. It's good, but it will knock a few years of your life. I agree with the comment above the curd cheese. Growing up in Biddeford, Maine we had a large French Canadian population. There use to be a number of local stores that sold pre-packaged "poutine cheese". It was a pretty common thing to eat at the summer festivals and fairs in the area.

You should try all the variations, such as with chicken and peas (called galvaude), with ground beef on top, with sausage, etc. There are places in Montreal that serve it with a caviar of green perpercorns on top–it's awesome!

A safer, easier way to do it is just to pour a bunch of mozzarella cheese over fries and pour gravy on top to melt the cheese. This is for those who are scared to try it.

not yet... I haven't been there, but it's definitely on my list of restaurants I have to go too! Martin Picard's poutine au foie gras would be considered a heart attack on a plate! ;)

one of the world's great comfort/drunk foods. exceptional stuff. i've only had it in montreal. haven't seen any place here in boston that does it well.
