Can you change a 5Y3GT rectifier to a GZ34 ?

I have a sweet little Tweed Proluxe that is a Tweed Deluxe with 6L6's in it in a 1x12 combo. It has the right trannies for 6L6's.

What I'm wanting to do is get rid of some of the sag and or compression.

Yes, you should have no problem...just be sure to rebias to compensate for the voltage changes:

5Y3 draws 2.0A filament current
GZ34 draws 1.9A filament current

.... and be sure that your filter caps are rated for the extra ~30 volts they'll see with the 5AR4.

There's no general rule concerning rectifier substitutions...every case is unique.

Talked to the guy who built my amp and he says it needs a choke before it can be changed to a GZ34. He says it will smoke a resistor before the Caps. He mentioned that he would do it for me but then I got to ship it and get it shipped back.
