Sorry if this seems stupid.
I want to swap out one of the speakers in my 2x12 cab.
The speaker going in is a 8ohm speaker.
The inputs choices on the cabinet say 8ohm Mono or 16 ohm stereo.

Which input would I into if I wanted to disconnect one of the speakers and listen to them one at a time?

If your cab says 16 ohm stereo/8 ohm mono that means each speaker inside is 16 ohms. That means putting your 8 ohm speaker in the cab is not an option unless you replace both speakers with 8 ohm speakers. If you did that then the cab would be 8 ohm stereo/4 ohm mono.

Sounds like you have two 16 Ohm speakers in you cab. Ideally, if you are replacing only one speaker, it should be a 16 Ohm speaker.
