I'm going to try to brine my turkey this year and looking for some good recipes, ideas or suggestions.

an option is to "bard" a turkey-which is simply placing salt pork strips over the turkey at reduced heat/covered-then removing strips and finishing at higher heat to brown(uncovered).receipts are at cookscountry.com

Saw an article in the L.A. Times on "dry-brining" yesterday that sounds interesting. You just sprinkle salt and (optional) aromatics over the bird and put it in the fridge in a plastic bag for a few days. Even works with frozen birds. I once got in a heated argument with another member over this very topic.
I was very much in favor of the treatment, he against.
He almost had me convinced, but in the end I remembered something my grandfather told me as a young child...
To brine own self be true.

Question: "What's the difference between brining and marinating?"
Answer: Brining involves salt and osmosis to exchange the fluid in the brine with the water inside the meat. Marinating used acidity to break down the texture of the meat. You can actually do both if your marinate has salt in it.
