ok, let's say i'm typing a document and i want to enter something like this [your name here], and when someone clicks on it, the [your name here] disappears and you just type your name there.

how do i format that?

Go to the "View" menu and down to "Toolbars" and select "Forms"

Position the cursor where you want your field and click the first button on the toolbar (Text Form Field).

Then Right-click the "Text Form Field" in your document, and choose "Properties". Then enter your " [your name here] " in the "Default Text" box.

I forgot.

You'll need to "protect" the document after you've done all the above.

It's the Lock icon on the Forms toolbar.
