Somewhere a long the line in the last few weeks it seams I read, and got the impression that too much filtering (caps or a choke) can significantly reduce that sense of touch that some amps... Dr z's for instance... Are known for. It this true?
too much can reduce responsiveness. but what is too much depends on amp and player

It also depends on the intended use of the amp
I have two Identical amps one with more filtering for large venue outdoor
type gigs ...
The one with less is for indoor club gigs where lower volume tone is a good thing
There is a Marshall HW1959 reissue on ebay right now supposedly
Eric Johnsons 2004-2006 touring lead amp
The filters are visible in the photos.. the amp shipped with 50/50 cans
and is now loaded with 32/32's
Obviously Eric plays larger venues ..
with that reduced filtering that amp would have a softer touch & that would tame some of the nasty attack and brightness those are famous for
IMHO adjusting filter values is a very effective way to dial in an amp
