I like to do low carb during the week to stave off the temptation to go overboard on picking up something from fast food or general take out or casual sit down restaurants.
I love Italian, but that's nearly impossible on low carb. So my wife and I came up with the following:
"Lasagna Stuffed Peppers"
Slice two red, orange or yellow BIG bell peppers vertically down the center and remove the seeds.
Empty a few cans of seasoned tomatoes (can use low carb pasta sauce) into a pot to simmer.
Brown ground beef in a pan, drain when cooked. Combine sauce and meat.
Stand peppers up like a bowl on a cookie sheet. Line the bottom with low fat ricotta cheese. Pour the beef/sauce mixture into each pepper until full. Top the filled peppers with skim milk mozzarella cheese.
Preheat oven to 350. Place sheet in oven for 30 minutes or until cheese is melted.
Take out, let stand for 5 minutes.
Enjoy! It's so delicious.
