The crust looks about right, but the top needs a lot more browning to get 'there'! :aok :drool

As mentioned above, the crust is carmelized... it's not like carcinogenic bbq smoke... so dine away! Of course, that's not taking the fat, cholesterol and sodium into account.
Mind you, it's pizza, so we willingly choose to ignore the fat, cholesterol and sodium for that short period in order to enjoy the divine experience! :D

Yep, Pequod's or Burt's (who used to run Peqod's) is REALLY GOOD stuff. On another level for sure.

Nice looking pie and even though I love a well done crust, the "carmelization" is a little too far into the black zone to be palatable for me.

i ate there when i was in chicago.
it was really good pizza. it was a lot different than the chicago "deep dish" i had. more of a pan pizza. i liked that and lou malnati's.
but none of them can compare to a real pizza. im not talking floppy NY kind either.
im talking great dough, with san marzano tomato, basil, EVOO, and mozzarella di bufala in a 1000 degree oven coming out in 10 minutes.
i've had this style pizza in NY, NJ, San Fran, Atlanta, and Naples Florida and it's the best every time.

I work 4 miles for a Pequod's and am wondering if I walked there and back if it'd justify eating there every day. Glad you liked it!!

i've had this style pizza in NY, NJ, San Fran, Atlanta, and Naples Florida and it's the best every time.
the water is so gross in Florida their breads/crusts are noticeably bad. I wonder if the place in Naples treated their water (or imported it).

dont know. im going again in september as my wife's father has a vacation condo there. i'll check it out again. it was honestly, one of the best pizza's i've had ever. id say easily top 10.
