Long weekend with potential for rain. Football.

Means it is time to cook carnitas and chile verde!:banana

I am roasting a boatload of peppers and tomatillos at the moment.

I'm so glad I live in California, I was raised 10 miles from the border in the small town of Holtville. Some of the best Mexican food in America, not that "fake crap" the real deal. A lot of smoke, brews and great food! Bien' bien

Well, I plan to render the fat from the pork to finish the cooking to a crisp. That is how I was taught.
