I don't think I've played enough different guitars to decide, but most likely, from what I have played and owned, it would be a Strat, HSS, don't know whose pickups I might go with, would have to do a bit of research, but Strat HSS. Though I'd like to try a PRS 513 sometime--just seems the tonal possibilities would be great on it, but I've not heard or played one, yet.

Id have me a nice R6 goldtop with some good original 50's p90s.

Id love to have an original '56, but if I'm only allowed one guitar then I dont want to be afraid to thrash it.
