From single coil to humbucker

If you change from single coil to humbucker, should you also change the volume and tone pots to a different resistance?

Not always.
Some pickups sound better with 250k pots than the standard 500k pots used with humbuckers.
I think it would depend if the pickup is a PAF,High output,or a humbucker size in a single coil slot. They each sound totally different to each other and to what kind of amp/guitar setup you use makes a big difference.

general rule in my experience has usually been 250K for singles, 300K - 500K for humbuckers.

I would be going from a single coil to a single coil sized humbucker.
