If any of you make this recipe after reading this thread, I'd love to hear your opinion on the results. I'm planning to try it in the near future.

JamesT, did you make the meatball recipe before or after this thread? Regardless, thanks for the feedback... that was the next one on my radar! Your comment on quantities is very relevant.

No I made it some time ago when his meatball recipie was put up here. I did not use any salt, but the herbs and cheese added a lot and I cooked them in some spaghetti sauce I made as he did and I think that helped. Frankly, I just sort of watched his video several times and if he put a half a handfull of something in it so did I and if partial bowlI got as bowl that looked the same size. I did make my own bread crumbs from hamburger buns because they have less salt than a bix of bread crumbs. I would rather get the salt from extra parmasan cheese.

Mac and cheese is so easy to make and way better fresh than boxed. I just boil a pound of pasta (under-cook it by about 2 minutes). Drain, but keep a cup of the water. Add pasta back to pot with the cup 'o water, put in a can of evap milk, add two cups of your favorite shredded cheeses and cook for another 2-3 minutes while stirring well but gently. Let it sit for about 5 minutes to really thicken up and that's it. It doesn't have to be fancy to be really good.

My homemade mac and cheese starts with a good rue... melt some butter in a small sauce pan, then gradually wisk in flour until it turns into the pasty rue. Add milk over low heat, and in about five minutes it will thicken up nicely. Mix in and melt some grated cheese and presto, you have the perfect cheese sauce.

Oh, that Fabio. Whew! I thought you meant the "Fabio" Fabio. Now I can look at the video. He's a great chef and IMO, should have won that season of Top Chef.

Thanks I had looked and did not find recipie. I looked again and saw some . I wish it had search. My wife is from Italy and she said best meat ball she ever had. (LOLs!)
