What is your favorite cheese?

I just discovered a cheese called Grand Ewe. It is a dutch sheep's gouda (although it does not taste anything like a standard gouda). It is amazing! We can't stop eating it. Creamy, salty, savory. Got me thinking, how many other amazing cheeses are out there I have never heard of?

Pretty much every cheese is dabomb for me, except for a few.

It would be easier for me if you asked which ones I DON'T like. But since you didn't...

Danish Jarlsberg. A firm and nutty delight! Oh.. and White Stilton with apricots is a fave as well.

Spanish Manchego or Gouda works well for me with a nice glass of Champagne.

I love cheese, and really enjoy something about all of them (even the really pungent, washed rind ones). That said, a piece of Roquefort with a drip of honey may win out for me.

I can't pick just one, but Délice de Bourgogne comes to mind. Triple-cream, and a moderate amount of stinkiness.
