I think his tone pre '75 was fatter than after '75. For the fatter tone get a strat, a SF Twin, and MXR OD pedal, and a Mutron III. That would be the basic set up.

There's a lot of information about the different incarnations of his rig on the net.

I love the SG sounds he got on Live/Dead, that's my personal favorite Jer tone. I'd pick the Gator Strat as a close second.
