ditto on the circuit board, might need to "break" the traces and solder in wires... maybe...

MacCallan's sounds like the ticket to me.

I changed out the 120ohm cathode resistor for a 150ohm. I haven't taken readings but the volume dropped significantly. I think something else is wrong.

I have $150 into this amp and speaker (the cab was rotted out). Do you guys think it may be better to salvage the iron, chassis, tubes(pre/rect) good parts, etc. and do a full rebuild once I get a little more understanding/know-how. I don't want to keep hacking away only to have the circuit board or something else go out. The more I poke around, the more issues I find (and possibly cause).

Well, you definitely have something else going on (maybe many something else's), so if you're not interested in chasing them down as an avocation, then putting it on ice and revisiting it later and/or using it as an organ donor may be the way to go.

FWIW the original amp wasn't a world beater sound wise, so you'd not be tossing away any holy grail I don't imagine.

What Mr. Grimm said. This is a relatively simple circuit. The beauty is that the same principles apply to the simple and the complex. Learning is fun...go for it!
