Correct. Snapshots allow you to store settings, but not save different layouts of effects. You can however disable/enable effects. Have you tried...

Well when I was building boutique pedals, I would install the jacks in the case, position the PCB on the jacks, then solder the jacks to the PCB...
There should be a large nut that secures the jack to the case/enclosure. As long as that is tight, there's no strain transferred to the solder joints.
