Honey beest has a pre gain control. If you use any kind of boost before the bee then you don't need a Honey Beest.
Uber has the additional treble control. That's all.

I know you know what a regular honey bee sounds like. :aok

I found the uber to be a little gainier than the bee, so although I could get the brightness where I wanted it, it didn't quite give me what I loved in the honeybee. That said, lowering the guitar volume brought me a lot closer, and I appreciated the (very slight?) gain boost when going for brighter sounds. So, I think if I was going to buy one, it would probably be the uberbee.
