These are the best cookies I've ever had. If you make them, you WILL gain weight. 12oz good quality dark chocolate, NOT unsweetened 1/2 cup coconut oil or butter (I prefer coconut oil) 2/3 cup unbleached flour 1 cup sugar 3 large eggs 1/2 tsp baking powder 1/2 tsp salt 1 Tbsp instant coffee grounds 2 tsp vanilla 1 1/2 cups lightly-toasted chopped nuts (almonds, walnuts or pecans) 1 1/2 cups good dark chocolate chips Preheat oven to 325 deg. Move oven racks to top third and bottom third of the oven. Line 2 baking sheets with parchment paper. Melt chocolate and butter/coconut oil in a double boiler or metal bowl over boiling water. Allow to cool. Whisk together flour, baking powder and salt in a medium bowl. Whisk eggs, sugar, vanilla and coffee grounds in a large bowl until fluffy, but not stiff. Add cooled chocolate to the egg mixture and mix well. Add flour mixture and mix well. Add nuts and chocolate chips and stir till evenly distributed. Using an ice-cream scoop or similar sized scoop, drop mounds of dough onto baking sheets, 12 per sheet. Bake for approx 15 minutes, or until slightly cracked in appearance. Cool on baking sheets.
