I'm looking to buy a new OD pedal shortly and have narrowed down my choices to the Fulltone OCD or Fulltone Plimsoul. Also thought about the Wampler Pinnacle but it's slightly more than I want to spend.

It's a AC30C2 set to the edge of breakup, perhaps a little farther. CP Jazzmaster or Epiphone ES-355. Mostly playing Indie Rock or Post Rock type stuff.

If you were me, which would you choose? Or is there another pedal I should be looking at?

What are you looking to acomplish by adding a drive pedal? The OCD and Plimsoul are pretty different from one another, I've used both and to me the OCD has more high gain capabilities while the Plimsoul has a more singing/blooming tone to it's gain tones. My biggest complaint with both of these pedals is that they raised my noise floor signifigantly when I wasn't playing, I was able to eq most of the noise out but it was still noticeable.

Heck, I play a Jazzmaster... noise floor is not an issue. Not going to hear that over the 60 cycle hum anyway.

Being that I can't run the Vox flat out all the time (still need a clean tone) I need a pedal (or two) to get dirt sounds. Already have the EHX Soul Food for one sound.

I'd say go with the OCD if you're looking for more of that cranked Marshall tone, if you're looking for more of the Dumble tone go with the Plimsoul. Pro Guitar Shop has a pretty good demo on Youtube featuring the Plimsoul and there's no shortage of demo videos on the OCD. FWIW my signal chain goes Jetter Indigo (Fuzz) > JHS Double Barrel > Plimsoul, I'm basically using the Double barrel for my low to med level gain tones and the Plimsoul for my high gain tones. I play a 335 and a strat and use this board for both my church gigs and my classic rock gigs. Currently I'm waiting on my number to be called for a King of Tone pedal which will replace the Plimsoul.

Never tried the Plimsoul, but the V.1 OCD sounds REALLY good w/ my AC15. Don't know which AC30 you have, but I think it would sound good w/ the OCD. That doesn't mean the Plimsoul isn't better!

OCD if you're running the amp with some breakup.
I liked the Plim way more into a perfectly clean amp because it really starts to sing with the gain cranked up. On lower gain settings, it's not the greatest imo. The OCD is much better at being a medium gain sound. It's a bit drier sounding as well.
My experience with them into a Vox - the Plim imposes more of it's own character on your sound, the OCD was a bit more true to my base tone with the LP setting on the OCD.

I've watched all kinds of videos on both pedals. Only found one or two using Vox style amps (which tend to have a "complicated" relationship with gain pedals)

My OCD v1.4 boosted my signal way too much and made my guitar always too loud. The lead sound was fizzy--just not good. I got a Plimsoul and find it to be a much better pedal--it is more natural sounding. The stage 2 knob lets me dial in gain which is good for leads.

Ive used both with an AC30, and a pittbull 45 which is somewhat similar with EL84's. For juicing the Vox, id say the OCD. On the cheap, i found the MXR Classic Overdrive to work great as well. plus theyre selling them for $20 new at Guitar Center right now.

I have an AC15 and the OCD does not work well with it no matter the guitar. The best boost pedals I have found that work well with the Vox are:
1) Ratt
2) Timmy
3) Hotcake
