Why do some have the metal covers over them and some don't?

Is it more than aesthetics? Can they simply be added to ones that don't have them?

I've added covers to humbuckers. For me it was just about looks.

Not originally for aesthetics, any more than any other pickup cover - meant to keep sweat, detritus, picks, beverages etc. out of the coil windings. Also meant to dampen microphonics on the original PAFS because the coils weren't potted.

Because some people want them and some don't. It's mostly just aesthetics, although cheap plated brass covers can alter the tone.

They were originally designed as part of the original Gibson humbuckers to reduce noise even further, and to protect the coils. Eventually in the 60s it was discovered that removing the covers made for a brighter tone, so guys started doing it, and still do it to this day. Some leave them off for tone reasons, others for aesthetics. How much tone difference depends on the quality of the cover; it ranges from a pretty big difference with cheap covers to pretty small with the better ones. And some prefer the tone with them on.
