...what small company builders/luthiers are located in the southeastern U.S.? Are there any or many? Would love to the peruse the websites of builders who are relatively local to me.

If North Carolina is considered Southeast than you hit the jackpot. McInturff, McNaught, Gadow and Zion are all in NC. probably a few others that I can't think of at the moment too.

Also, Melancon is in Louisiana.
