Man, that was masterful. No idea what to suggest for profiles. That Strat itself seems to have a pretty distinct voice. Maybe start with this Fuchs profile, middle PU on the Strat?

There are videos where he talks about his gear on youtube and there is a sticky thread on his forum about his tone, where he chimes in, aswell.
Obviously he is mainly playing Les Pauls but maybe it helps a bit.
You will not find that sound anywhere, its a combination of multiple amps and DIs and unfortunetly no one has been able to convince him of letting its rig be profiled.... and now it has changed it completly.
Ah, the video where he is playing Rory Gallagher ACTUAL Strat... (His then girlfriend Sandy arranged it with Rory's family).
As mentioned above, Joe's tone chain is extremely complex. Back then he ran dual amps, usually a Marshall and a Dumble style amp through three sets of 4x12 cabs in a wet/dry/wet config. He also mics the amps and runs them through a Palmer speaker simulator for the FOH system.
The sound you hear on most videos is the combination of the stage setup and the FOH mix, which I think would be a nightmare to capture as an IR. It's a setup that works well for Joe - I have been to a couple of his live shows and the sound is superb.
But check out some of his more recent videos - he is now playing a lot more Fender style guitars, and has changed his amp setup to Fender amps too. LOL, he is as bad as most of us on here, getting bored with his tone and changing it up...
His amp setup from what I believe is the same tour where he used Rory Gallagher guitar in detailed in the clip below. Part 5 (Not below) is also interesting.
