I'd ask this in a piano forum, but those classical guys would miss the point entirely.

In the guitar world we have people like Vai, Buckethead, Govan, Lane etc...

Are there any parallels in the piano world that you know of? i.e. great players who write their own stuff that pushes musical boundaries.

Do these type of musicians even exist?

Sure, many virtuosos in piano competition though still play the greats, Chopin, List, etc. There are a lot of young piano virtuosos though. Check out the big piano competition in Ft. Worth which takes place every two years to get an idea of the up and coming talent.

Just to be clear I'm not talking about virtuosos that focus on playing music as written by long gone composers.

When it comes to just jaw-dropping inhuman "step away from the instrument because you'll never come close to that" piano, there will only ever be one Art Tatum.

I agree that Art did it first, but Oscar could do it as well.

Keith Emerson, Rick Wakeman, Jan Hammer in the Rock world. Chick Corea, Herbie Hancock, and Keith Jarrett are absolute virtuosi.

Lots and lots of amazing classical and jazz piano players, including several listed here already. I adore the way McCoy Tyner plays.

If you're talking about rock players, particularly current progressive rock virtuosos, I think Jordan Rudess needs to be part of that conversation.

My favorite rock keyboard player is Bill Payne. He brings a lot of influences together with great style, but I don't know if he's the type of player you're talking about.

He didn't play it himself, but Conlon Nancarrow wrote incredibly complicated pieces that were performed by a player piano.
