    I'm a fan of pig, but I'd have to say pork chops are about my least favorite version. Not bad at all, just not that exciting. Wouldn't order it in a restaurant.

    Carnitas, al pastor, chile verde. Moo Shu. Or the various American BBQ uses of the pig, now you've got my attention!

    Look for Dutch Bacon.

    It's cut from the loin rather than the belly.

    Tho not as good, IMO, as belly bacon.

    But not as fatty, kinda like the Canadian stuff.

    Must be the curing. Mild and won't get crispy if you like that.

    Actually more ham than bacon.

    If I'm at a place that's serving something like Berkshire, Old Spot, or Ossabaw I'll definitely order a chop but properly made carnitas are my favorite.

    I had breaded pan seared chops and eggs for breakfast just last week. Man were they GOOD!

    I think I'm going to sous vide some pork loins next week. ~145 degrees seems to be a nice starting point.
