Why do some people block out the serial number when they post a picture of a guitar they are selling? It seems people that sell pedals and amps don't do this, so why guitars? Just curious...

Irrational paranoia. Either that, or they saw someone else doing it, and for some strange reason though it was a good idea.

I did know a Gretch that had it's identity stolen a few years back though. What a mess - took a few years before it could get a loan for a for a refret.

If you bought it used, there's always the chance it was hot.

They think (incorrectly, because other people repeat it so often) that if you show the serial number, someone will report that guitar/serial as stolen, and then take the guitar from you. When asked for an actual example of that happening in real life, no one can come up with one.

For Ibanez guitars, seeing a serial number is critical, because it can date the manufacture of the guitar, which you can then compare to the guitar's features to see if there have been any upgrades, replacements, etc.
