If I put copper shielding on the control plate of my guild, do I have to ground it?

Do I just ground it to the ground pot where the pickups are grounded?

Yes, all grounds wires generally should terminate back to a single point (some use the back of the pot, others prefer a ground lug screwed into the body - at least that's the way many Strats do it). The key is that grounds all come back to a single common point.
