I realize the line is blurry about what's derivative or not, but I can't think of many guitars with only single coil pickups that aren't obvious Strat or Tele derivatives. What guitars have 1, 2, or 3 single coils?

Ibanez Fireman had three single coils at one point. Bryan May's Red Special. Can't think of others at the moment...

Ya gotta think outside the box every now and then. There are dozens of models with either Dynasonics or P90's, or some other non-Fender single coil pickup--most of which are not variants of Fender models.

Burns Trisonics. Yes, they look sort of like Strat single coils, but they're a completely different animal. To hear them in action, listen to any Queen album.

The underappreciated "staple" pickup, used on many Les Paul Customs until it was replaced by the humbucker.

The "gold foil" pickup, prized by Ry Cooder and Dan Auerbach (The Black Keys).

Some of the EBMM Albert Lee models have three single coils. Great Guitars, neck may not be for everyone.

Thanks everyone! I am seeing a theme here -- some older hollowbody guitars w/ single pickup at the neck, and of course P-90 guitars like Les Paul variants. That three P-90 Firebird looks awesome.

Reverend is also doing some interesting work -- I'd love to try the Warhawk.
