I'm about to replace the filter and bypass caps on a '71 Fender Bassman 50.

I don't know if the it's the guitar or if it's the amp, but I'm hearing sort of a constipated sound. It's not "letting go" and giving up the goods on high volume.

Just wondering if the amp will change significantly after the caps replacement.

There may be a big change or not, depending how far gone they are now.The health of the rest of the amp has to be good or simply changing the filter caps might not be earth shattering in terms of tone.
You may have tube, bias or other issues to deal with as well. But it's never bad to change old electrolytic caps.

If all else on the amp is in order, expect tighter bass and no hum.
