Lance Keltner.....great playing style and tone.
Pete Thorn is great - I don't even really care about whatever pedal he's demoing, I just love to watch him play.
Phil X too, I can sit and watch his Fretted Americana videos all day.
And Paul Gilbert is a great teacher as well as a great guitarist, there's tons instructional videos of him all over YouTube.
I am okay with the blurring of lines. Obviously many mentioned here are doing pedals demos but it's pretty clear that many of us are viewing what they do as something good enough to learn from. This is technically not "instruction" or "teaching" yet we learn and that's cool with me. The boundaries are pretty wide.
