Wow! There are so many I could not pick one. I'd probably go with something by George Harrison or David Gilmour for their strong sense of melody and purpose when they solo.

Not much of a metal guy and the vocals are annoying but I've never heard anything else like this

Interesting sonic choices there...

Also, is it me or does that dual guitar portion at the end bare an interesting resemblance to the end of Clapton's Layla?

I've got a couple, can't pick just one:

Van Halen - House of Pain
Faith No More - Ashes to Ashes
Exodus - Objection Overruled (Gary Holt end solo)
Pink Floyd - Sorrow (everything David Gilmour does on the live version)

Stairway to heaven. Ok i said it. But ever since i was a little kid it made my neck hairs stand up and gave me goose bumps on my arms. The tone is incredible, the phrasing is perfect.
the sheer magnitude and bombasity of the rhythm behind it carry that solo into eternity. one for the ages.

I would say it's a tie between Clapton's live Old Love from 24 Nights and Gilmour's Wall Pt 2 solo.

But then again I love... oh wait, you said one. :(

The solo in The Czar by Mastodon. Starts around 8:15. The build up to it is great too - starts around 7:00

Brent Hinds is a fantastic player.
