Composer or guitarist? We know what he wrote for guitar, but were his guitar chops as respected as his violin chops?
Legend has it that Paganini would sometimes switch to guitar at the end of joint recitals. Paganini was able to play all the violin parts on guitar. Not impossible for fantastic guitarists today, but given the low popularity of guitar relative to the popularity of violin during his time, it is understandable that his violin playing tremendously overshadowed his guitar playing.

Today:

Vini Reilly
Johnny Marr
Ty Tabor
Richard Lloyd
Eric Johnson/Greg Koch

I know, I cheated but I couldn't list one "other worldly" talents without the other.

Top 5 that I've seen personally:

Richard Thompson
Adrian Belew
Vernon Reid
The Edge
Pete Townsend

Honorable mention - Victor Wooten is possibly more one with his instrument than anyone else I've ever seen live.
